Gilligans Farm Fresh Meats Limited is seeking a skilled  Meat Deboner to join their team at Gilligan Farm, Derrane Road, Four Mile House, Co. Roscommon, F42EV61.

Key Responsibilities
•Boning & Trimming: Deconstruct beef carcasses into primal cuts, removing bones, cartilage, and excess fat with high precision to maximize yield and minimize waste.
•Bespoke Order Preparation: Portion, slice, and prepare meat cuts according to specific customer order sheets, weight requirements, and specialized trimming instructions.
•Packing & Vacuum Sealing: Package finished products efficiently using commercial vacuum packers and wrapping machinery to maintain strict shelf-life and freshness standards.
•Labelling & Traceability: Generate and apply product labels detailing cuts, weights, pack dates, use-by dates, and origin tracking codes in compliance with food safety regulations.

Requirements & Qualifications
•Experience: Proven experience working as a meat deboner, boner, or production butcher in a meat processing plant or craft butchery.
•Knife Skills: Advanced, safe knife skills with a deep understanding of meat anatomy and standard commercial cuts.
•Abattoir Experience (Advantage): Prior experience working in an abattoir/slaughterhouse environment is a distinct advantage but not strictly mandatory.
•English fluency is also essential for this role.

A minimum of 1-3 years’ experience in a similar role is essential.
Remuneration is €36,605 per annum based on 39 hours per week.
