Assist the Head Chef in maintaining and controlling food quality and standards. Deputise effectively in the absence of the Head Chef. Ensure food control through careful purchasing, portion management, and waste reduction. Carry out section duties as directed, maintaining consistent five-star standards. Accurately complete costings and contribute to menu planning with creative suggestions. Supervise Mise en Place and maintain high standards across all outlets. Ensure hygiene and cleanliness are upheld in line with EHO requirements and cleaning schedules. Train kitchen staff on hygiene and equipment use; maintain a clean, safe working environment. Manage staff discipline and ensure grooming standards are met. Communicate closely with kitchen team and other departments, including Restaurant, Room Service, and Bar. Liaise with suppliers, ensuring consistent quality and value of delivered goods. Compile weekly staff rosters and manage staff food preparation for the Staff Restaurant. Enforce hotel policies and procedures, including emergency and fire safety training. Display professionalism and a supportive attitude towards colleagues and guests. Report directly to the Head Chef and support overall kitchen operations as required.
