Job Description:
Lead overall operational strategy across accommodation, restaurant, and bar divisions, ensuring alignment with 5-star service standards and profitability goals.
Oversee financial performance of F&B outlets (restaurant, bar, in-room dining), including revenue optimisation, cost controls, and profitability analysis.
Collaborate with the Executive Chef and F&B Manager on menu engineering, pricing strategy, and culinary innovation to maintain competitiveness in the luxury hospitality market.
Establish and enforce service quality benchmarks for restaurant and bar teams, ensuring luxury dining and beverage experiences consistent with brand standards.
Implement robust inventory management, supplier contracts, and procurement systems for food, beverages, and hotel consumables, ensuring quality and compliance with Irish regulations.

Key Requirements:
Maintain deep knowledge of international 5-star hotel service standards, brand compliance protocols, and luxury guest experience design.
Possess comprehensive knowledge of Irish and EU health, safety, fire, and food regulations governing hospitality operations.
Understand modern hospitality technology trends, including digital guest engagement tools and operational automation.
Show awareness of global culinary trends, fine-dining service protocols, and premium beverage operations relevant to upscale restaurants and bars.
Exhibit knowledge of sustainability frameworks and green-hotel practices to align with environmental and ESG goals.
