Sous Chef | BARLEY HOUSE WINE BAR BARLEY HOUSE is hiring a skilled Sous Chef to support our Head Chef and help deliver consistently high-quality food in a fast-paced, customer-focused kitchen. You will play a key role in daily prep, service execution, stock control, and maintaining excellent kitchen standards. This role suits someone hands-on, reliable, and proud of their work, with strong kitchen discipline, attention to detail, and a great team attitude. Key Responsibilities: Support the Head Chef with daily kitchen operations and smooth service Prepare and execute menu items to spec, ensuring speed and consistency Maintain high standards of hygiene, HACCP compliance, and allergen controls Assist with ordering, stock rotation (FIFO), portion control, and waste reduction Help train and support kitchen team members during prep and service Maintain cleanliness and organisation across all kitchen sections Contribute ideas for specials, menu improvements, and better kitchen workflows Key Requirements Previous experience as a Sous Chef (or strong Chef de Partie ready to step up) Strong knowledge of HACCP, food safety, and allergen awareness Ability to lead by example and stay calm under pressure Strong time management and teamwork skills Flexibility to work weekends and busy peak periods Legal right to work in Ireland What We Offer Stable, ongoing employment in a growing venue Supportive team environment and structured kitchen systems Competitive pay (based on experience) Location: Barley Hall, Cork Street, Dublin 8 Contract Type: Employed role (PAYE) Successful candidates will be responsible for making their own Tax returns to the Revenue Commissioners.
