Established in 1988, Ballyburden Meats is a leading Irish meat processor supplying premium beef, lamb, pork, bacon and poultry to the food service sector across Cork, including hospitals, hotels, restaurants and contract caterers. Role Overview We are seeking an experienced Butcher to join our production team. The successful candidate will perform skilled meat preparation to high standards in a chilled environment. Key Responsibilities Butcher and portion carcasses of beef, lamb, pork and poultry to precise specifications. Perform skilled cutting, boning, trimming and slicing of meat. Prepare meat cuts and portions for further processing or dispatch. Maintain tools, equipment and strict hygiene/safety protocols (HACCP). Conduct quality checks and ensure efficient workflow to meet production targets. Requirements Proven experience as a Butcher or Meat Cutter (minimum 2 years preferred). Strong knife skills and knowledge of meat cuts and butchery techniques. Ability to work in a cold/chilled production environment. High attention to detail, physical fitness and reliability.
