About the Role CL Meats Ltd requires a highly skilled, specialised meat industry professional to join our operations within our wholesale industrial cold-room and factory division. This role requires advanced technical knife skills, intensive anatomical knowledge of livestock carcasses, and strict adherence to commercial food safety legislation. Key Duties and Responsibilities • Execute high-yield primal breakdown and industrial carcass de-boning. • Utilise precision knife work to de-bone, trim, and seam-butcher whole beef quarters, pork, and poultry carcasses. • Safely operate heavy-duty industrial processing machinery, including commercial bandsaws. • Manage structural stock rotation and maintain strict quality control protocols within deep sub-zero cold rooms and blast freezers. • Maximise meat yield while strictly adhering to rigorous commercial factory and client specifications. • Maintain clean, hygienic, and sanitised workstations in compliance with factory standards.
